CLAIMS

1 A method to prepare a chicken thigh kokorec, wherein chicken thigh (1) is sliced into small pieces and the mix which is made by blending the sliced pieces of chicken thighs (1) and chicken skins (2) passed through the cuter together is cooked in an electrical oven and then natural gas-fired oven, respectively and the cooked product obtained therefrom is well seasoned with melted chicken abdominal fat (3), salt (4), cumin (5), black pepper (6), thyme (7) and ground sweet paprika (8) and chicken thighs seasoned with spices and fat is left cooled.

Description:
PREPARATION OF CHICKEN THIGH KOKOREC The present invention relates to preparation of chicken thigh kokorec which is prepared by slicing chicken thighs into small pieces after which necessary cooking takes place and by seasoning it with spices and melted abdominal fat.

Prior Art Today, kokorec is a well-known meal which is made of offal and seasoned with specific spices. The present invention provides preparing kokorec made of chicken thighs.

The Advantages of The Invention: The present invention uses chicken thighs rather than offal which enables us to prevent problems which may occur in terms of micro-biological aspect. The present invention makes the product healthier and more reliable than the kokorec consumed up till today. Thus, kokorec is now a product which can be consumed safely by all ages of consumers. In addition to that, people who cannot eat offal may be safely consume the product of the invention. By means of seasoning the product of the invention with spices which is usually used for conventional kokorec, there is no difference in terms of taste. In addition to that, since it is prepared with chicken thighs, the protein value of the product of the invention is higher than that of the conventional kokorec.

Best Mode for Carrying Out The Invention:

The present invention uses chicken thighs and the fat of chicken skins as food raw material, wherein in addition of these substances’ spices are added and the method is carried out by cooking in the oven. Detailed Description of The Invention And Use Area

In the present invention firstly chicken thighs (1) is sliced into small pieces. After, sliced chicken thighs (1) and ground chicken skin (2) is mixed in a predetermined ratio. The prepared chicken thigh (1) is pre-cooked in the electrical oven firstly, and then cooking is resumed in the natural gas-fired oven until the product temperature reaches at least 74°C. When the product is passed from electrical oven to natural gas-fired oven, it is turned over on the belts, whereby it is ensured that chicken thighs (1) is well-cooked on both sides. The cooked product (when hot) is seasoned with readily-prepared spices which is used in conventional kokorec consisting of salt (4), cumin (5), black pepper (6), thyme (7) an ground sweet paprika (8) and melted abdominal fat (3). Lastly, the product is frozen and is making ready for the packaging.

The present invention is a chicken thigh kokorec which may be easily prepared in household or in restaurants and which is rather tasty and reliable. The chicken thigh kokorec of the present invention may be consumed in a sandwich as well as separately and/or in a serving plate with nutrients such as green salad, rice, types of pickles etc. List of Reference Signs:
