Abstract:
The present invention relates to a process for composite calendaring of dough sheets and loose and lumpy flour, the process comprising the following steps: S1, for making dough sheets, performing forming calendering on loose and lumpy flour so as to obtain a primary dough sheet; and S2, calendering the primary dough sheet of S1 and loose and lumpy flour by means of a group of pressure rollers, continuously adding the loose and lumpy flour when the pressure rollers calender the primary dough sheet, and performing primary composite calendering on the primary dough sheet and primary composite loose and lumpy flour, so as to form a sheet and loose and lumpy flour primary composite dough sheet, etc. The present invention has the following advantages: according to the process for processing a dough sheet and loose and lumpy flour composite dough sheet provided in the present invention, a single method of simply compositing two dough sheets during traditional noodle making is replaced with a method of performing composite calendering on dough sheets and loose and lumpy flour multiple times; compared with a traditional dough and belt composite double-layer structure, noodles made of multiple layers of clearly layered sheet and loose and lumpy flour composite dough sheets have an obvious advantage in taste improvement; and the dough sheet formed by performing composite calendering on the dough sheets and the loose and lumpy flour multiple times facilitates the better formation of a gluten network, such that formed fresh noodles are tougher and chewier, and are more layered.
