Abstract:
The present invention pertains to a production method for a processed plant protein food, said method including causing porous plant protein particles to swell using water or a flavoring liquid, and then adding a powdered plant protein and transglutaminase thereto and mixing. The present invention also pertains to the processed plant protein food that contains a composition containing the porous plant protein particles and the powdered plant protein and has been acted on by the transglutaminase. Using the present invention, it is possible to provide a processed plant protein food having an equivalent texture to meat, and especially to steak meat or sliced meat.
