Abstract:
A Saccharopolyspora composition and an application thereof in food. The composition comprises Saccharopolyspora hirsuta J2 which is screened from wheat koji and has an effect of reducing the content of biogenic amines, and Saccharopolyspora jiangxiensis J3. A hybrid Saccharopolyspora preparation prepared by two strains is used in the preparation process of fermented alcoholic drinks, fermented food, or fermented seasonings, so that the content of amino acids can be increased while the content of biogenic amines is reduced, the nutritional value of fermented products is improved, and then the effects of enhancing the quality of fermented food and improving the safety of the fermented food are achieved.
