Abstract:
Provided is solid milk having suitable free fat and manageable strength. This solid milk is obtained by compression molding of powdered milk, and has a hardening coefficient IF of 0.477 mm2 of more, the hardening coefficient being represented by formula (1) where w is the width of a designated region n formed by diving the solid milk into multiple (N) pieces in the height direction, δ is the thickness of the designated region n, Svvoxel_n is the specific surface area voxel ratio of the designated region n, R0 is the total lactose content, and Rn is the total crystal amount of lactose in the designated region n. The solid milk has a free fat content FF of 1.23 wt% or less.
