Abstract:
The present invention addresses the problem of providing a syneresis inhibitor that can be safely and advantageously used in fields such as foods, cosmetics, quasi drugs, drugs and industrial products, and the use thereof. The problem is solved by providing: a syneresis inhibitor containing, as an active ingredient, a branched α-glucan mixture which contains glucose as a constituent sugar, has a branched structure of a glucose polymerization degree of 1 or higher that is bonded, via a bond other than an α-1,4 bond, to a non-reducing terminal glucose residue positioned at one end of a linear glucan bonded via an α-1,4 bond and having a glucose polymerization degree of 3 or higher and, when digested by isomaltodextranase, generates 25-50% by mass of isomaltose relative to solid digested products, and in which the ratio of glucose residues bonded via an α-1,4 bond and glucose residues bonded via an α-1,6 bond is within the range of 1:0.6 to 1:4 and the total of the two types of residues constitutes 60% or more of the total glucose residues; and the use the syneresis inhibitor.
