Abstract:
The present invention relates to water-soluble sterol derivatives for lowering cholesterol levels and a method for producing the same. A method for producing water-soluble sterol derivatives for lowering cholesterol levels according to the present invention is characterized by mixing a phytosterol intermediate and a polyethylene glycol (PEG) of which weight average molecular weight is from 200 to 1000 in a ratio of 1:2 to 1:6 mole ratio under the presence of an alkaline catalyst in a nonpolar organic solvent, and adding a bonding agent to cause a combination reaction. According to the method using a PEG oligomer as a carrier and controlling a molecular structure of a product of the present invention, it is possible to produce water-soluble sterol derivatives which are soluble in high concentrations of about 3.0 weight percent or more based on the weight of sterol in water, safe for human use and useful for water-soluble foods or medicine materials, and have a cholesterol-lowering effect.
