Abstract:

PROBLEM TO BE SOLVED: To obtain a foamy oil-in-water type emulsion containing mulberry leaves having a flavor and a color of mulberry leaves.
SOLUTION: This foamy oil-in-water type emulsion is produced by adding a specific amount of fine powder of mulberry leaves and an extract of mulberry leaves to a water phase to dissolve the fine powder and the extract, then adding an oil phase and passing the resultant substance through a first homogenization process and a second homogenization process, is capable of controlling various kinds of geriatric diseases by the active ingredient of mulberry leaves contained in the oil-in-water type emulsion, has a flavor and a fragrance characteristic of mulberry leaves and an excellent color and is useful for a decoration, a topping, etc. of cake.
