Abstract:

PURPOSE: To prepare a powdery fermented seasoning exhibiting a mild and good-body and rich flavor and having a body condition-controlling function owing to high-concentration branched oligosaccharides contained therein.

CONSTITUTION: This powdery fermented seasoning is produced by allowing branched oligosaccharide-containing saccharides to take place alcohol fermentation, adding and dissolving branched oligosaccharide-containing saccharides, a fermenting alcohol and/or a powdery base substance such as branched oliogosaccharide-containing saccharides, starch syrup and a low-DE starch syrup in the resultant fermented seasoning and powdering it according to the spray dry method.
