Abstract:

PURPOSE: To obtain the title KAMABOKO capable of stably covering cheese and an ingredient with coat, having excellent taste compatibility with cheese by sandwiching thermostable cheese and an ingredient in between heated KAMABOKO, packaging in vacuum and boiling.

CONSTITUTION: Ground fish 5 is heated to give KAMABOKO 1, which is folded so that sheetlike thermostable cheese 2 and an ingredient 3 are sandwiched in between KAMABOKO. The sheet is coated with ground fish as a binder to retain the folding, then packed with a plastic film and boiled to give the aimed KAMABOKO.
