Abstract:

To provide a method for industrially and inexpensively producing a vegetable chitosan in a high yield.

The production method is carried out by the followings: after preparing the vegetable chitosan by adding a concentrated alkali solution to dried basidiomycetes etc., followed by heating it so as to convert acetyl glucosamines of a vegetable chitin contained in the basidiomycetes etc., into glucosamines through deacetylation, a concentrated alkali component therein is neutralized with an organic acid or a weak acid. Thereby the recovering of the vegetable chitosan by filtration and the process of washing treatment with water, are carried out with ease.
