Abstract:
PURPOSE: To obtain a food additive useful as a texture modifier for marine paste products, processed cattle meat or soybean food, by using a food alginate, starch, or protein together.
CONSTITUTION: One or two or more types of food alginates, e.g. sodium, calcium, and magnesium salts of alginic acid, are incorporated with starch, e.g. wheat or potato starch, or animal or vegetable protein, e.g. gelatin, milk casein, or gluten. The mixture is used as a texture modifier for marine fish-paste products, processed cattle meat food, e.g. ham or sausage, processed starch food, e.g. bread or noodles, or processed soybean food, e.g. (dried) bean curd.
