Abstract:

To achieve a food which has low calories, contains many dietary fibers, and provides good texture by making a food which is composed mainly of starch contain many soluble dietary fibers such as konnyaku.

A product containing konnyaku that contains 5 to 50 pts.mass of konnyaku ingredient within 100 pts.mass is manufactured by the process of adding 5 to 35 pts.mass of water to 100 pts.mass of a mixture containing starch and konnyaku powder or soluble dietary fibers, pressurizing and mixing without adding konnyaku coagulant agent, and preparing a paste mixture, and the process of forming the paste mixture into a specified form by pressurizing and extruding the paste mixture.
