Abstract:
To provide a doughnut having a crispy texture and a soft texture and emanating aroma.SOLUTION: A freshly squeezed fruit juice doughnut according to the invention is a doughnut in which an inside soft part with a soft texture is covered with a surface layer hardened by frying and is characterized in that the doughnut comprises freshly squeezed fruit juice of a fruit squeezed in a dispersed manner over the outside surface of said surface hardened layer and that said surface hardened layer realizes a crispy texture and said freshly squeezed fruit juice emanates a fruit juice aroma.Its production method comprises: a step of making a frozen dough for a doughnut obtained by freezing a dough for a doughnut at -15°C to -30°C of freezing temperature and for 10 to 30 minutes of freezing time; a step of making the doughnut covered with the surface hardened layer with the crispy texture and having the inside soft part with the soft texture by frying the frozen dough at 170°C to 210°C of frying temperature and for 1 minute and 30 seconds to 3 minutes 30 seconds of frying time without defrosting; a step of preserving the doughnut; and a step of squeezing a cut fruit over the doughnut surface to be cause the freshly squeezed fruit juice to be absorbed thereinto.SELECTED DRAWING: Figure 2
