Abstract:

PURPOSE: To efficiently freeze a food having high adhesive properties, e.g. white boiled rice or white rice gruel by putting the food and a freezing mixture in a freezer, keeping the temperature of a part of the freezer with which the food is brought into contact in a state, in which the food surface temperature is kept to ≥ a prescribed temperature, to ≥ the prescribed temperature and efficiently conducting individual freezing of the food.
CONSTITUTION: This individual freezing of food is carried out while keeping a part in a freezer with which the food is brought into contact in a state, in which at least the food surface temperature is kept to ≥0°C, to ≥0°C by putting the food and a freezing mixture in the freezer. In addition, this food-contacting part is preferably coated with a synthetic resin selected from a PE-based resin, polyester, silicone rubber and a fluororesin. In addition, the apparatus for individual freezing is composed of a rotary 2 supported on a frame 1, an agitation unit 3 formed at the rotational center of the rotary drum 2 and a nozzle tube 4 which is a heater for heating the rotary drum 2.
