PURPOSE: To make possible to form a kneaded powder cake having low calorie, low cariosity and a feeling of quality as well as using wholly cane sugar by using a saccharide mixture mixed meso-erythritol and saccharides other than said erythritol in a specific ratio as an edulcorant of kneaded powder cake.
CONSTITUTION: In a cake composed of formed and baked of raw material mix of kneaded powder cake mixed with edulcorant and expanding agent, a mixture of saccharides composed of 25-75wt.% meso-erythritol and 75-25wt.% at least one saccharides selected from sugar and sugaralcohol other than meso- erythritol is used as an edulcorant of said cake. As other saccharides used with meso-erythritol, non-cariosity sugar such as coupling sugar, palatinose or isomaltose and cariosity sugar such as cane sugar, grape sugar, thick malt syrup or isomerized sugar, are used. Besides, sorbitol, maltitol or xylitol, are used as other sugaralcohol.
