To provide a method and an apparatus for the heating/drying of a thin food sheet with a simple construction dispensing with a boiling process, giving a thin food sheet composed of a fish paste food made of small octopus, pond smelt, goby, whitebait, krill, spotted shrimp and fish meat paste, or spinach, etc., keeping the original form of the raw material, having good preservability and enabling the drying of the food while leaving the taste and freshness of freshly caught state.
The heating/drying apparatus for a thin food sheet is composed of a cavity placed in a metal casing and receiving microwave radiation introduced from a microwave oscillator, trays horizontally placed in the cavity in steps and holding the thin food sheet in a state to open the upper surface of the sheet, and a means to discharge steam generated from the thin food sheet placed on the tray and heated by the microwave radiation from the casing.
