To provide a method for using passion fruits for achieving zero emission of passion fruits through effectively using the whole of fruit skin remaining after using the content of passion fruits as vegetables and fruits and juice, i.e. the whole 100% including internal skin, middle skin and external skin.
A thickening stabilizer derived from passion fruits is obtained by separating the inner skin part of passion fruit skin after removing content followed by freeze drying. The thickening stabilizer as a dried product from which water is removed is suitable for accurately measuring a prescribed amount and producing a stable high-quality product when producing a processed food excluding jam, so the stabilizer is suitable for commercializing. As a result of this, the concern for remaining agricultural chemicals is eliminated, and safety of consumers can be secured.
