Abstract:
PROBLEM TO BE SOLVED: To provide steamed bread which is suitable, when an infant is experienced in eating the steamed bread by hands, and which facilitates the deeds of the infant when the infant brings the steamed bread to the mouth, chews the brought bread and swallows the chewed bread.SOLUTION: When a premix for steamed bread is kneaded with a liquid component and an obtained kneaded product is heated to prepare the steamed bread, the prepared steamed bread has the stickiness equal to or lower than 75 J/mat 20°C when water of 45 wt.% of the total weight of the steamed bread is incorporated in the steamed bread. It does not matter if one of the following materials (a) to (d) is added to the premix for the steamed bread in order to reduce the stickiness. The material (a) is a mixture of grain powder having 12 wt.% or lower water content with edible fat and oil. The material (b) is another mixture of the grain powder having 12 wt.% or lower water content with an emulsifier. The material (c) is a different mixture of the edible fat and oil with the emulsifier. The material (d) is a three-component mixture of the grain powder having 12 wt.% or lower water content, the edible fat and oil with the emulsifier.
