Abstract:
PURPOSE: To prepare a cake having high preservability, agreeable moistness, and excellent taste and flavor, by applying an aqueous alcohol containing a preservative to a cake, evaporating a part of the alcohol, and sealing the cake in a vessel.
CONSTITUTION: A mixture of alcohol and water, containing ≤75%, pref. 65W1% of alcohol, and containing a preservative such as dehydroacetic acid, polyphosphoric acid salt, etc., is applied to the surface of a cake such as a bun with bean-jam filling. After evaporating a part of the applied alcohol, the cake is put in a vessel, and sealed.
