PURPOSE: To reduce the content of vaporization of alcohol, to improve the danger of fire and the fear of environmental pollution, and to raise the fungal resistance of cakes, by coating the cakes with cold alcoholic water, by putting them in a container, followed by airtight sealing.
CONSTITUTION: Cakes are coated with alcoholic water cooled to about not higher than 20°C, by spray, etc., put in a waterproof container made of plastic, etc., sealed airtightly, and stored. Alcoholic water with an alcohol content of about 95W5wt%, especially 80W10wt% is preferable. Alcohol, whisky, low-class distilled spirits, sake, etc. can be used as the alcohol. Since alcohol deeply and uniformly penetrated into the inner parts of the cakes remains in them in this method, it improves extremely fungal resistance. Any cakes may be used, but this method has especially an effect on cakes made of fats and oils as materials.
