Abstract:

PURPOSE: To simply obtain retort noodles capable of being readily loosened by treating boiled noodles treated with an acid with an o/w emulsion and then retort sterilizing the resultant treated noodles.
CONSTITUTION: This method for producing retort noodles is to immerse boiled noodles in a solution of an organic acid, then treat the resultant noodles with an o/w emulsion and subsequently retort sterilize the treated noodles. When the o/w emulsion is constituted of an acid solution, an oil and fat and an emulsifying agent (a polyglycerol ester of a fatty acid, etc.), the acid treatment and addition of the oil and fat can simultaneously be carried out. The emulsion is separated into an aqueous solution and oil and fat by the retort sterilization to coat the surfaces of the noodles with fine oil droplets. Thereby, the oil and fat are removed by draining of hot water eating to suppress an increase in calories.
