Abstract:
PROBLEM TO BE SOLVED: Providing an acidic oil-in-water emulsified food product with which the natural sweetness of sugar can be tasted. SOLUTION: The present invention is an acidic oil-in-water emulsified food product comprising a nonvolatile acid, a trisaccharide or lower sugar and/or a high intensity sweetener, an emulsifying agent, and edible fat and oil, wherein the amount of the nonvolatile acid included is 0.01-1.8 mass%, inclusive, relative to the total amount of the acidic oil-in-water emulsified food product, and the mass ratio of the amount of a volatile acid included relative to the amount of the nonvolatile acid included is less than 0.020.
