Abstract:
Provided is a fatty mass composition and a meat alternative, the fatty mass composition comprising: a fat or oil-containing granular material having a melting point of greater than or equal to 0.1°C; and an edible ionically crosslinkable polymer crosslinked with cations, wherein the granular material has an average grain diameter of 50 μm - 500 μm.
