Abstract:
Provided is a culture method with which a high concentration of lactic acid bacteria can be easily achieved by essentially just managing/controlling only the culture temperature, and without even having to perform agitation or the like. This method is characterized in that lactic acid bacteria, such as Lactococcus lactis, Lactobacillus reuteri, or Lactobacillus brevis, which exhibit a metabolic capacity to convert arginine into citrulline, or lactic acid bacteria exhibiting a metabolic capacity to convert arginine into citrulline, and to subsequently convert citrulline into ornithine, are cultured in a culture medium having arginine added thereto in order to inhibit a reduction in the pH of the culture medium.
