Abstract:
The invention relates to a solid fresh soybean milk and a process for making the same, particularly, to a ready to drink reconsititutable solid fresh soybean milk, which is subjected to freeze-drying under vacuum, and a process for making the same, and is in the field of food industry technology. The process comprises the steps of making soybean milk by conventional technology at first, putting the cold soybean milk into containers, then being subjected to freeze drying under vacuum, finally packaging the resultant solid fresh soybean milk. The solid soybean milk can be restored to liquid milk almost the same flavor and nutrients of conventional fresh soybean milk and better taste by boiling water .The invention provides a new product of tasting well and drinking conveniently.
