Abstract:

The invention relates to an olive oil production method includes a malaxer (20) for kneading crushed olives, a three-phase decanter (30) in which the olives kneaded in the malaxer (20) are transferred, a wastewater outlet line (70) for discharging the wastewater obtained from the three-phase decanter (30), a separator (40) to obtain olive oil by separating at least some of the water from the aqueous olive oil that obtained in the three-phase decanter (30), a holding tank (50) where the wastewater outlet line (70) of the three-phase decanter (30) is connected, and a feedback line (60) to transfer the collected wastewater in the mentioned holding tank (50) to the three-phase decanter (30).
